They are made of silicone. I am starting to really love all silicone kitchen things, as it's a great material to bake in and clean afterwords. The walls of the silicone cups are thick to prevent tearing. They should hold up for a very long time.<br/><br /><br/><br />They are of perfect size for a normal sized muffin or cupcake. Being reusable, with these, no one should ever have to buy paper muffin cups again. This will save money. These also come in a plastic case, making them convenient to store, and keep from damage.<br/><br /><br/><br />Using these cups are so easy and convenient. You don't even need a muffin baking pan to use these. You can just put these directly on a cookie sheet. You don't even need to spray these, as the muffins after baking, will just pop right out. Once you are done using them, they easily clean right up with some soap and warm water. You can even put them in the dishwasher if you have one available.<br/><br /><br/><br />Overall, I am extremely pleased with these silicone baking cups. I highly recommend these for anyone who bakes a lot of muffins. While I liked it, someone who didn't realize I already had a torch got me this for Christmas. Now able to compare after making creme brulees for Christmas with this one, I will be giving me other away. This doe indeed feel and act more "professional".<br/><br /><br/><br />It's not only better made with heavier metal, you can see when you are getting low on fuel, the torch head is longer so it's safer and produces a better flame, it holds more fuel so you don't have to stop and refill...<br/><br /><br/><br />...and it came with a superb little cookbook with full color pictures that broadened my use of the tool beyond s'mores and creme brulees. I had never thought of using it for French onion soup before to melt the cheese perfectly over the soup rim, I"d never thought of using it to make a sea scallop gratin that knocks your socks off, brown a meringue in seconds and, more perfectly, tiny individual meringue pies for a very elegant party dessert, roasting peppers and turning jalapeños to chipotles.... It broadened my torch use and torch thinking.<br/><br /><br/><br />Also it stands on it's own so if you, for example, want to roast a marshmallow and need to set it down and deal with a dripping marshmallow, the hot head is safe and never touches hour counter.<br/><br /><br/><br />No negatives on this one. It's designed well and I've already used it each weekend in the 3 weeks since it was sent to me... First up, this Culina Premium Quality 2lb Nonstick Loaf Pan. The pan is nicely made of heavy 0.6 mm carbon steel with no crevices or creases to trap debris. It features a non-stick coating on the inside and measures about 8 x 4 inches at the top edge.<br/><br /><br/><br />▶︎ NOTE - I do not have any clue why this is called a "2 pound" pan, since it is far too small to hold 2 pounds of standard bread dough. In the US loaf pans are usually labeled by their dimensions in inches and recipes specify them accordingly. The two most common are 9 x 5 and 8.5 x 4.5.<br/><br /><br/><br />I love to test new bakeware and wouldn't consider reviewing a baking pan without baking in it, so yesterday I took the Culina Loaf Pan out for a spin. Now, anyone who has been baking for a bit knows full well that "non-stick" really means "less stick" - nothing is totally non-stick. Normally I line all of my baking pans with baking parchment - baking ingredients are too expensive to waste and I don't much enjoy cleanup - but in the interests of testing that non-stick surface I passed on my usual procedure and greased/floured the tin instead.<br/><br /><br/><br />It is zucchini season here in Vermont and I'm a big believer in hiding the vegetables, so having received a recipe for a Double Chocolate Zucchini Bread from King Arthur Flour the day before, I thought that would make a great test recipe, since chocolate is notoriously temperamental and quick to burn. I did make a few adaptations in the interests of better nutrition. Here's the recipe as I baked it -<br/><br /><br/><br />▶︎ TEST RECIPE - Double Chocolate Zucchini Bread<br/><br /><br/><br />Preheat the oven to 350F. Grease (use butter or shortening - oil beads up on non stick cookware) and flour the loaf pan.<br/><br /><br/><br />2 large eggs<br/><br />1/3 cup honey<br/><br />1/2 cup vegetable oil<br/><br />1/2 cup brown sugar (I used Billington's Natural Light Brown Muscovado Sugar)<br/><br />1 teaspoon vanilla extract<br/><br /><br/><br />Combine the above ingredients in a 3 quart bowl and beat until smooth.<br/><br /><br/><br />1 teaspoon salt<br/><br />1/2 teaspoon baking soda<br/><br />1/2 teaspoon baking powder<br/><br />1/2 teaspoon Medaglia D'Oro Instant Espresso Coffee powder<br/><br />1/3 cup cocoa powder (the unsweetened kind intended for baking, Dutch Process preferred)<br/><br />1 2/3 cup King Arthur White Whole Wheat Flour<br/><br />1/3 cup wheat germ<br/><br /><br/><br />Stir all the dry ingredients together, then add them to the wet ingredients and beat just until combined. (The secret to good quick breads, biscuits and pancakes is to mix them as little as possible!)<br/><br /><br/><br />2 cups shredded zucchini with peel (about 1 medium zucchini)<br/><br />1 cup chocolate chips<br/><br /><br/><br />Fold in zucchini and chocolate chips. Pour into prepared pan and bake 55-75 minutes. (Mine took exactly 58 minutes.) This is chocolate, so watch it very carefully. Test with a toothpick - the bread is done when the toothpick comes out clean. Cool 15 minutes, then tip onto a rack and let stand until cold. Wrap securely in plastic wrap and allow to stand overnight before serving.<br/><br /><br/><br />I got one loaf plus two small muffins from the recipe. (The original recipe was designed for a 8.5 x 4.5 inch loaf pan.) Like all quick breads that contain fruit or vegetables of any sort, this is FAR better on the second or third day than it is right after it is baked. Freezes well.<br/><br /><br/><br />Grandma's $0.02 - Though a tiny bit on the smaller side, this is a nice, sturdy, easy-to-clean pan that bakes very well. (A trick from Jacques Pepin - butter your parchment after you've cut it to fit, place it butter side down in the pan and then flip it over so that the buttered side is right side up to save work.)<br/><br /><br/><br />▶︎ Never cut your baked goods or use a knife in your non-stick bakeware. That leaves scratches that will quickly reduce the life-expectancy of your pan. If you cut your parchment a bit larger on two sides so that you have a bit of an overhang you can easily lift your cake straight up out of the pan to place it on a rack to cool. (Do allow it to cool for 5 minutes or so first.)<br/><br /><br/><br />▶︎ This bakeware, like most, is dishwasher "safe" but there is a big BUT - use a gel cleanser in your dishwasher rather than tablets. The grittiness of the tablets will scratch the non-stick surface. Note that the manufacturer recommends hand-washing - and so does Grandma.<br/><br /><br/><br />Here's the recipe that I used. The cake is downright luscious - almost identical to the recipe I baked so often in my early teen years. Great for brunch, makes a great coffee cake or even a dessert. For that matter, my daughter is here for a visit and we just called it dinner!<br/><br /><br/><br />▶︎▶︎▶︎ Blueberry Cake { MAKES 1 CAKE } ◀︎◀︎◀︎<br/><br /><br/><br />For the topping:<br/><br /><br/><br />¼ CUP BUTTER<br/><br />⅓ CUP FLOUR<br/><br />½ CUP SUGAR<br/><br />1 TEASPOON CINNAMON<br/><br /><br/><br />For the cake:<br/><br /><br/><br />½ CUP (ONE STICK) BUTTER<br/><br />¾ CUP SUGAR<br/><br />2 EGGS, SEPARATED<br/><br />1 TEASPOON VANILLA<br/><br />2 CUPS FLOUR<br/><br />2 TEASPOONS BAKING POWDER<br/><br />¾ CUP MILK<br/><br />1½ TO 2 CUPS FLOURED BLUEBERRIES (Save a couple of tablespoons of the flour to use to flour the blueberries.)<br/><br /><br/><br />Prepare the topping first by cutting the ingredients together with a fork and set aside. Preheat the oven to 350 degrees. Grease and flour an 8- or 9-inch square pan. Cream together the butter and sugar and beat in the egg yolks. Add the vanilla.<br/><br /><br/><br />Beat the egg whites until stiff and set aside. (NOTE FROM GRANDMA - If you beat the egg whites first you can then proceed to cream the butter and sugar in a different bowl without washing the beaters!)<br/><br /><br/><br />Sift together the flour and baking powder and add to the butter and sugar mixture alternately with the milk. Fold in the whites and then gently add the berries. Distribute the topping or just sprinkle with cinnamon sugar. Bake for 40 minutes, slightly longer if the berries are frozen. Do make sure the rack is on the bottom setting. Non-pourous so it doesn't soak up tastes and smells that can never be washed out. I've found that most Pyrex bowls with tops I had looked at didn't fit on their bowls very well or were made out of materials which didn't seem like they would outlast me--as they should. These tops are durable, make a good seal that wont pop off or leak.
