A reusable substitute for wax and parchment paper. I recommend reading the instructions and details that come on the package. You don't need to oil or spray down before putting food on it. I sometimes sprinkle flour first if I'm baking something like pizza or bread on the surface. Just place food on the mat on a tray, and pop it in the oven. Don't exceed the temperature range, don't scrub it with the back side of a sponge, and don't cut on it - in fact, avoid using anything near it that could potentially cut it, because once it's cut you can't use it anymore. I am pleasantly surprised that it has not blackened like all other mats do and that the quality has remained the same since I bought it (probably used them about 30 times in the oven since). I also use it for rolling out dough and fondant - Not an ideal surface, because it gets sticky, but at least it's cleaner than using my kitchen countertop. I have yet to try it with chocolate and candy making, but I'll update once I have. 3 Month update: Still awesome, I use these about twice a week. The only thing that's stained has been a tomato-oil sauce. I have now tried the mats w candy making (ie, pipe melted chocolate on it, and throw it in the fridge or freezer), and it worked really well. Only problem is if you're gonna roll up the mat to make a curved 3D piece, note the candy/chocolate will stick to both sides and you'll need parchment paper on one side. To make sure that my new measuring cup would last, I did some investigation on the new "Pyrex" brand of glassware. Corning Glass Works the company that manufactured the Pyrex line had sold the name to another company in the late 90s and there were reports of this newer glassware exploding/breaking. The explosions were a result of the new glassware being made of a different type of glass compared to the vintage Pyrex glassware which was made of borosilicate glass (the same type used in laboratory glassware abused by students and scientists). It was also a result of users not following instructions from the manufacturer (instructions who needs instructions? Uh oh... it blew up). But some people are used to using the old Pyrex glassware in ways that the newer type of glass would not be compatible with. That type of usage almost always involved thermal shock or rapid change in temperature such as placing hot glassware onto a cold surface, putting hot glassware with burnt-on food into the sink to soak, placing refrigerated glassware into a preheated oven, etc. The borosilicate glass originally used to make Pyrex glassware had a low thermal expansion coefficient which made it more resistant to rapid temperature changes compared to the new tempered soda lime glass now in use. It is understandable that the company had to cut costs by using a low-cost type of glass in order to survive, but they should also remember that consumers have a habit of using their product in a certain way (hey habits are hard to break). With that problem sorted out, I purchased the measuring cup and read the instructions/warnings before using it. For most uses in the kitchen, the new measuring cup works great on most types of ingredients. It also has the clear measurement markings in metric and US units plus a comfortable handle similar to older Pyrex designs. The only issue I had was how to measure out boiling hot liquids for something like making Jello because this would mean that the glass is being exposed to a rapid temperature change. The way around this problem is to start with the liquid at room temperature, measure out the amount needed, and heating it up in the microwave. It felt inconvenient to have to wait for liquids to cool for measuring and then reheating it, but I had to break the old routine of pouring hot liquids into a measuring cup. In any case, this is still a good measuring cup that is still made in the United States (hooray for supporting domestic jobs & reducing the amount of fuel used to transport it to consumers). The measuring cup is made of thick glass with bold, easy to read markings and a solid handle. It is also easier to clean than plastic measuring cups that tend to stain and absorb odors. Just remember not to expose the measuring cup to rapid temperature changes and it should last just as long as any other piece of old Pyrex glassware. I had been using plastic Gladwear, Ziploc, and Rubbermaid containers, but had several problems with them: 1. Storing tomato sauce and then re-heating it in the container dyed them a weird shade of orange. 2. They are supposed to be microwaveable but I found that after a few months of normal use, they were useless - warped, funny colors, scratched, etc. 3. The plastic scratched easily, creating chanels where bacteria could grow - eww. 4. I've read multiple articles from multiple magazines quoting multiple studies about how microwaving plastics release toxic chemicals into your food. 5. After several months of use, they were beat and had to be recycled - recycling is, of course, better than throwing them in the trash, but the process of recycling creates pollution and not only that, I'd have to go out and buy more, spending more money, which was what I was trying to get away from. Good for the company, because they got more money, bad for me, the customer. BUT this Pyrex set is GREAT! 7 containers, 7 lids. LOVE IT!!! 1. I can reheat food in the microwave (without the plastic lid) and don't have to worry about chemicals leaking in to my food. 2. They do great in the freezer - we use one of the small ones to hold ground coffee - we buy beans and ground several days worth at once, then pop the grounds in the small container and into the freezer. 3. It's Pyrex, so it's no big deal when my daughter accidently drops one helping me put the dishes away. 4. I can use them to hold raw marrinating meat, chicken, or fish without having to worry about them holding on to the bacteria. 5. They are dishwasher safe, just put the lids on the top rack only, and they come out perfect, very smooth surface so they are easy to wash. 6. I've read other reviews saying that they look nice too, so they can go from fridge or oven (7. Oh yeah, they are oven-safe too) to table as serving dishes - this is true, if we ever had a dinner party, I would't think twice about using them as serving dishes. 8. They are simple, which I love, because I won't have to worry about them clashing with anything (we are a young family so we have hodge-podge of kitchen stuff anyway so it doesn't matter right now). 9. They "nest" together very nicely - we live in a small apt with limited kitchen storage, but these containers, one stacked up inside the other, with the lids separating the containers, don't take up any more space than my old plastic junk. I use these ALL THE TIME, I can't say enough good things about them. All of mine are "in commision" right now, except for one which is in the dishwasher. A reusable substitute for wax and parchment paper. I recommend reading the instructions and details that come on the package. You don't need to oil or spray down before putting food on it. I sometimes sprinkle flour first if I'm baking something like pizza or bread on the surface. Just place food on the mat on a tray, and pop it in the oven. Don't exceed the temperature range, don't scrub it with the back side of a sponge, and don't cut on it - in fact, avoid using anything near it that could potentially cut it, because once it's cut you can't use it anymore. I am pleasantly surprised that it has not blackened like all other mats do and that the quality has remained the same since I bought it (probably used them about 30 times in the oven since). I also use it for rolling out dough and fondant - Not an ideal surface, because it gets sticky, but at least it's cleaner than using my kitchen countertop. I have yet to try it with chocolate and candy making, but I'll update once I have. 3 Month update: Still awesome, I use these about twice a week. The only thing that's stained has been a tomato-oil sauce. I have now tried the mats w candy making (ie, pipe melted chocolate on it, and throw it in the fridge or freezer), and it worked really well. Only problem is if you're gonna roll up the mat to make a curved 3D piece, note the candy/chocolate will stick to both sides and you'll need parchment paper on one side. I have been trying to find some carrots that are a bit bigger to use with these, since the shapes cut from average carrots tend to be clipped at the corners. They're still cute, though, and I can use them on plenty of other things, such as pickled beets or mango slices. I'd recommend hand washing and drying right away. I haven't had problems with rust yet, but in my experience, most cookie cutter-like tools don't do well if exposed to water for very long. September 2011 update: I previously mentioned these may be too big to use on some vegetables but figured out if you slice a vegetable, such as a carrot, at an angle, you'll have a bigger surface.
