The tops of the cutters are turned under, and are comfortable to press down on while cutting, and the generous height makes them ideal for biscuits or even to use as a food mold. It has vent holes around the edge of the top which are completely separate from the finger *indentations*, which protects your fingers from being burned. It is just the right size: wide enough for a dinner plate, but tall enough for a heaped bowl. I like the collapsible feature, but note that there is a little trick to popping it out; you have to push at a certain distance from the edge, then it pops easily. It's well-known in that world that COE -- coefficient of expansion -- will tell you everything about how glass will perform under temperature changes. Borosilicate, or hard glass, has a COE around 30. Soda lime, or soft glass, has a COE between 90 and 110. When glass expands or contracts, it breaks. To use an example from my glassworking experience, I can put a large rod of borosilicate glass at room temperature directly into the flame of a torch (temperature between 1500 and 2000F), and it won't shatter. Try the same thing with a soft glass rod of the same size, and you'll have shards of hot glass all over your workbench.<br/><br /><br/><br />Also, you can't mix different COEs of glass in the same piece; it renders it structurally unstable. So Pyrex has to be either hard glass or soft glass; it cannot be a mixture of the two.<br/><br /><br/><br />Similarly, I got a set of Pyrex bowls for my wedding that lasted for years before succumbing to breakage (via drop). I still have one of them. I also have a newer set of the same size bowls. One of them chipped on the bottom almost immediately. At that point I wasn't aware of the differences in glass, so I didn't know why, but now I do.<br/><br /><br/><br />Borosilicate is far more expensive than soda lime glass. I'm quite sure the change was made as a cost savings. Personally, I'd gladly pay more (and it would probably be double, at least) for a Pyrex set made of borosilicate.<br/><br /><br/><br />One more tidbit: glass pieces of any size must be annealed in a temperature controlled kiln to ensure structural stability, long life, and shatter resistance. That includes both borosilicate and soft glass. I would never sell a bead to someone that hadn't been annealed; a piece like that can break under any tiny stress. So Pyrex's assurance that they heat-treat their glass is undoubtedly correct, but I'd wager they always have.<br/><br /><br/><br />Caveat: I don't own this set but am considering purchasing it with the knowledge that it needs to be treated like it's made of glass. <b><u>Pyrex Easy Grab 8 piece Bake and Store set includes 1-ea 3 quart oblong,8 inch square, 2-ea 1 cup round storage dishes with blue plastic covers</u> </b></div>

I wanted the sheet pan that Cook's Illustrated/America's Test Kitchen named their winner, but there were so many conflicting reviews about whether this pan was/was not the winning model. So I set out on a quest, and this is what I learned:<br/><br />------------------------------------------------------------------<br/><br />In 2007 Cook's Illustrated/America's Test Kitchen published the results of their baking sheet (jelly roll pan) equipment review. The winning sheet pan rated "highly recommended" was the 13-gauge aluminum Lincoln Foodservice Half-Size Heavy Duty sheet pan. Cook's listed Superior Products as a source for this pan, and MISTAKENLY listed the model number as 806188, and this is where the confusion starts.<br/><br /><br/><br />806188 is Superior Product's ITEM number for this sheet pan sold on their website. If you visit the site you can see for yourself. This is a Superior Products number, and it IS NOT THE MODEL NUMBER of the pan. I phoned Superior Products and they confirmed this. ====> MAY/2010 UPDATE: I notified Cook's of their mistaken model number, and am happy to report they corrected it on their website.<br/><br /><br/><br />The trademark name for a line of Lincoln Foodservice "smallwares" is WEAR-EVER®. The Cook's-recommended sheet pan is part of this line of smallwares (pots, pans, bakeware, trays and other kitchen utensils). In late 2009 the Vollrath Company acquired the Lincoln Smallwares division. . . .BUT the Lincoln WEAR-EVER name goes on, and nothing has changed with this sheet pan. I phoned Vollrath and they confirmed this.<br/><br /><br/><br />If you are looking for Cook's winning sheet pan, THIS IS IT. The bottom of the pan should look exactly like the picture I added to the "customer images." Neither "Lincoln Foodservice" nor "Vollrath" are stamped anywhere on the pan; however, the pan might have a Lincoln Foodservice barcode sticker on it. This model is made of 13-gauge aluminum and the heaviest of three similar Lincoln WEAR-EVER half-sheet pans - the higher the gauge number, the thinner the aluminum.<br/><br /><br/><br />=> Model 9303 - is the 19-gauge/closed bead pan called ECONOMY. Vollrath 18" x 13" Economy Half Size Sheet Pan (12-0420) Category: Cake and Muffin Pans<br/><br />=> Model 5303 - is the 18-gauge/closed bead pan called STANDARD DUTY (Lincoln Wear-Ever® Standard Duty Half-Size Sheet Pan)<br/><br />=> Model 5314 - is the 13-gauge/open bead pan called HEAVY DUTY.<br/><br /><br/><br />The heavy duty model 5314 is the one tested by Cook's Illustrated/America's Test Kitchen and chosen the winner. I have no idea what is stamped on the back of the two other pans, but I suspect the model numbers would be on the pan somewhere.<br/><br /><br/><br />"Open bead" means the side rims roll over, but not completely, which some cooks like because it's easier to clean and is considered more sanitary. "Closed bead" means the side rims roll over completely forming something of a tube. Some cooks feel this makes for difficult cleaning and a place for gunk to collect and become foul. Others feel the closed bead adds to the overall strength of the pan.<br/><br /><br/><br />Clearly some folks have received the wrong pan, one or more citing they'd received EKCO brand pans. But others here who have received the WEAR-EVER 5314 pan thought it was wrong because it didn't say "Lincoln Foodservice" or "Vollrath" on the pan - but this IS NOT SO. If it is stamped on the bottom like the picture I posted, then it IS the right pan.<br/><br /><br/><br />====> DECEMBER/2010 UPDATE (thanks to J. Kendall): new-production pans are now being stamped "Vollrath by Wearever/5314." Read his/her comment for further information, and see his/her picture of the stamp of the new-production pan in "customer images." Nothing has changed, it's still the same pan, only the stamp on the bottom has changed.<br/><br /><br/><br />Numerous people have complained that the pan warps, and that Cook's claimed it wouldn't. Cook's DID NOT MAKE THIS CLAIM. The following copy/paste comes from their published review:<br/><br /><br/><br />Cook's says ====> While we experienced varying levels of warping with our pans during testing, warping can happen with any sheet pan, even a heavy-duty one, under certain conditions. Abrupt temperature changes are likely to result in warping, for example, if an empty, cold baking sheet goes into a hot oven. Similarly, having only a few scattered pieces of food on a baking sheet creates different temperature zones on the metal, with some spots where the pan is shielded from heat under the food, and others where it is fully exposed to heat. Different temperature zones contract or expand at different rates as they are heated, which causes warping.<br/><br /><br/><br />Slight warping does not affect the pan's cooking performance, however, to help prevent warping in your baking sheet, cover the pan's entire surface with food as uniformly as possible, and heat the pan gradually rather than abruptly. Using a wire grid cooling rack inside the sheet pan can help distribute heat better than cooking meats directly on the pan surface. We found a few brands of cooling racks that fit well inside our winning baking sheet. <====<br/><br /><br/><br />Finally, if you want Cook's winning cooling rack that fits inside this sheet pan, this is it: CIA Masters Collection 12 Inch x 17 Inch Wire Cooling Rack, Chrome Plate Steel .<br/><br />------------------------------------------------------------------<br/><br />At last my review - short and sweet. I got my pan for a song somewhere else on a special sale, but have had it now for several months. I agree with the Cook's Illustrated description - it's solid as a rock. The "open bead" rim is not remotely sharp. They are soft and flexible, the colors are very pretty, perfect for Easter. So far I have used them only once. I baked some devil's food cupcakes. I followed the directions on the packaging for the first use. I washed in warm soapy water, turning them inside out to get into all the grooves. I used olive oil to coat the insides instead of vegetable oil or cooking spray. Next, I filled them halfway with the cake batter and baked for twenty minutes. They do not collapse or fall down, they are sturdy. Once the cupcakes were finished, they easily slid out of the liners. I did not have to push the cakes out. The cupcakes were thoroughly cooked. The liners were easy to clean. I did place them in the dishwasher in order to see how they would handle it. At the end of the cycle, they were just as bright and flexible as when I received them. I will be using these for savory items and custards. I highly recommend these cupcake liners. It's made of nice, thick, quality silicone, and it makes the cutest star-shaped muffins! It's AWESOME, and really easy to work with. There's no need to buy any more paper liners for muffins or cupcakes!<br/><br /><br/><br />It's dishwasher safe, and I love how I don't have to worry about rust, which was a constant problem with my metal muffin tins. Also, they're super-flexible, so you can bend them any which way to store them, or to fit them into the dishwasher, and they always retain their sweet little star form afterwards.<br/><br /><br/><br />Finally, a couple tips for silicone baking:<br/><br /><br/><br />1. ALWAYS spray the cups with non-stick cooking spray before filling them with batter. I use the butter-flavored Mazola spray. Just so you know, and you don't freak out when you see it, the pan gets discolored on the top from the baked-on cooking spray that didn't land into the cups. Don't worry, they're not ruined. It's normal.<br/><br /><br/><br />2. Make sure you bake your food for several minutes LESS than called for on your recipe. I learned that the hard way. Food baked in silicone bakes faster. I wound up with plenty of burned muffins. :( For example, I make muffins in this pan on a regular basis, which are supposed to bake 16-21 minutes. I usually bake them about 13-14 minutes, and they're perfect, golden brown.<br/><br /><br/><br />Another fantastic Wilton product!
